The eggplant is a very versatile vegetable (actually, fruit, but that’s neither here nor there), that can be incorporated into many of your favorite dishes or used to create some new favorites.

A member of “nightshade” group of veggies, they are a host to many beneficial properties! Per cup they provide 3g of fiber for its 5g carbohydrates (that’s and over 50% ratio), 1 gram or protein, and only 20 measly calories. They are also a source of manganese, folate, vitamin K & C, and potassium and of course antioxidants.

Studies involving eggplant consumption show it can be beneficial for weight loss, heart health, and blood sugar control.  Dig in!
